There's nothing like a good bowl of chili on a cold autumn day! Instead of meat, I added more beans and quinua really 'strengthening' the recipe! Without meat, this recipe is still a whopping 10-13 grams of protein per cup! Chile does not usually associated with "clean" or healthy words and certainly not vegan. However, the entire family can enjoy this totally guilt-free Chile! So if your vegan, or we just want a healthier Chile, your gonna love super easy recipe! 1 teaspoon oil 1 minced olive 1/2 can of 28 oz onion3-5 cloves garlic 1 jar 14 oz of your favorite organic salsa3 1 diced tomatoes cans of beans of choice: I like to use one of each of the following (for more color): black, red and white/canelli kidney beans2 cups quinoa * 1 tablespoon chili powder 2 teaspoons cumin1/4 teaspoon cinnamon (opcionalPero think that you) give a little more "something") * use vegetable broth as needed which reduce the chili. I start with 1/2 a cup and add more if necessary. This depends on how thick you like it. I recommend looking for a low content of sodium organic broth.
* Generally a great well of quinoa I have already prepared during the week in the refrigerator, but if not - just follow the regular quinoa cooking time, then add to your chili. :) 1 Saute the onion and garlic in the olive oil in a large pit up to golden.2. Add remaining ingredients and stir well.3. Cook on medium heat until everything is well mixed and heated through.4 continue.
