Spice pumpkin muffins

 

Hello everyone! It goes along with the whole pumpkin craze, I thought that it should make pumpkin muffins spice! These are the perfect fall treat! And guess what? They are less than 70 calories and have only one gram of sugar, but one would never imagine! This recipe is gluten and lactose-free. We hope you enjoy!


Spice pumpkin muffins
(Makes 12 muffins)

1 cup canned pumpkin1/2 cup coco flour2 tablespoons vanilla powder (I use Perfect Fit) all 3 eggs1 teaspoon cinnamon1 teaspoon spice1 vanilla extract1/2 tsp. pumpkin pie teaspoon baking soda1/2-1 cup of almond milk (depending on how wet do you like) 1/4 cup stevia (optional) * Optional: add chopped dark chocolate or dry cranberriesCombine and mix all the ingredients in a bowlslowly stir in the milk of almonds. The batter should not be it runny. Muffin tin is filled with dough and bake at 350 for 25-30 minutes. Let cool and enjoy! Frost with Greek yoghurt, butter of peanut or even better... my pumpkin butter!
* Do not add any stevia and I thought they were delicious, but if you like sweeter, it later and add it.
