Coconut Chocolate Chip Protein Pancakes

These protein pancakes combine to of my favorite flavors: coconut and chocolate. These were inspired by favorite coconut chocolate chip Clif Bar, which is amazing by the way. These decadent pancakes are super fluffy, mega yummy coco-nutty and bursting with melty chocolate chips! Mmm mmm.. just the way I like it! Coconut Chocolate Chip Protein Pancakes:1/2 a mashed banana1 scoop vanilla protein powder (I use Perfect Fit: http://perfectfitprotein.com/)1 Tbs. ground flaxseed 1 Tbs. coconut flour (key for the coconut flavor)1/2 cup egg whites2 Tbs. almond milkdash of cinnamon1/4 tsp. baking soda1 Tbs. organic dark chocolate chips1 Tbs. coconut flakes (or shredded coconut)
Mash banana then combine all remaining ingredients except for chocolate chips and coconut flakes. Mix well.  Spray pan with coconut oil spray and pour batter in pan. Drop in chocolate chips and cook for a few minutes each side. You can make one jumbo pancake, 2 medium, or several minis! Whatever your little pancake lovin heart desires! ;)340 calories, 31 grams proteinFeel free to tweak the recipe- If you don't have flaxseed for example, add an extra Tbs. of coconut flour. No mashed banana? Try apple sauce, or leave it out completely!
